Here is an interesting dev board:

It is a 8 core microprocessor board with 4 ADC inputs, 256KB Flash and a
header that is compatible with the Raspberry Pi GPIO header. And this
starter kit is only $15 from Digikey:

The programming environment is open source:

And the programming language is a variant of C called xC which lets you
do some of the multi-processor stuff:
